Garlic steamed mussels with tomato & basil sauce

Directions
  1. Wash the mussels in a colander to remove any dirt and remove the stringy bits (the "beard") with a sharp knife. Discard any mussels which are broken and which do not close once tapped.
  2. Fry onions in a large saucepan, over a medium heat until golden.
  3. Pour in the dry white wine and bring to the boil, then stir in the DOLMIO® Express Tomato & Basil. Season with black pepper.
  4. Add the mussels, place the lid on the pan and cook for 3-4 minutes until the mussels start to open. Make sure all the mussels are open and discard any that are not.
  5. Divide the mussels between two bowls and pour the sauce over them. Garnish with basil leaves and serve with chunks of bread to mop the sauce.

  • 900g fresh mussels
  • 2 x medium-sized onions, chopped
  • 300ml dry white wine
  • Freshly ground black pepper, to taste
  • Fresh basil leaves, to garnish
