| Garlic steamed mussels with tomato & basil sauce |

Directions
- Wash the mussels in a colander to remove any dirt and remove the stringy bits (the "beard") with a sharp knife. Discard any mussels which are broken and which do not close once tapped.
- Fry onions in a large saucepan, over a medium heat until golden.
- Pour in the dry white wine and bring to the boil, then stir in the DOLMIO® Express Tomato & Basil. Season with black pepper.
- Add the mussels, place the lid on the pan and cook for 3-4 minutes until the mussels start to open. Make sure all the mussels are open and discard any that are not.
- Divide the mussels between two bowls and pour the sauce over them. Garnish with basil leaves and serve with chunks of bread to mop the sauce.
