Seared scallops with sweet pepper lime & chilli dressing

Directions
  1. Fry the onion and red chilli over a medium heat until golden brown. Stir in half of the DOLMIO® Stir-In Sweet Pepper sauce with a few grates of lime rind and the juice of the lime and heat through. Stir in the chopped coriander. Leave to one side.
  2. Then heat the oil in a griddle or frying pan until very hot. Season the scallops with salt and black pepper, then fry on both sides for approximately 1 minute or until just cooked.
  3. Divide the scallops between two plates, and drizzle some of the sauce over them. Place the remaining sauce in a small bowl and drizzle over the rocket leaves.

  • 1 medium onion, chopped
  • 1 red chilli, finely chopped
  • 1 lime
  • 2 tbsp coriander, freshly chopped
  • 1 tbsp olive oil
  • 6 large scallops
  • salt & black pepper
  • Rocket leaves
