Directions
- Fry the onion and red chilli over a medium heat until golden brown. Stir in half of the DOLMIO® Stir-In Sweet Pepper sauce with a few grates of lime rind and the juice of the lime and heat through. Stir in the chopped coriander. Leave to one side.
- Then heat the oil in a griddle or frying pan until very hot. Season the scallops with salt and black pepper, then fry on both sides for approximately 1 minute or until just cooked.
- Divide the scallops between two plates, and drizzle some of the sauce over them. Place the remaining sauce in a small bowl and drizzle over the rocket leaves.
