Mamas' Extra Spicy Prawns and Peppers recipe

Ingredients

  • 400g raw shelled king prawns
  • 1 small onion, chopped
  • 2 red peppers, sliced
  • 100g baby corn, cut in half lengthways
  • 1 x 500g jar Dolmio Extra Onion
  • and Garlic Sauce
  • 1 tsp ground coriander
  • 1 tsp chilli powder
  • 1/2 tsp ground cumin powder
  • 300g couscous
  • 2 tbsp fresh coriander, chopped
  • 2 tbsp oil

Method

  • 1. Heat a wok over a high heat until hot then add 1 tbsp of the olive oil. Toss in the onion, peppers and corn and stir fry for 5 minutes or until softened.
  • 2. Add the king prawns to the vegetables and fry for a further 2 minutes, then stir in the cumin, ground coriander and chilli, cook for 30 seconds then pour in the jar of Dolmio sauce.
  • 3. Heat through for another 5 minutes and at the last minute of cooking stir in the chopped coriander.
  • 4. Meanwhile place the couscous into a bowl and stir the remaining olive oil. Pour over boiling water and cover with cling film. Allow to steam for 3 - 5 minutes. Fluff with a fork and grind over black pepper. Serve with the spicy prawns and sauce.
