Taste of Calabria with lemon zest and calamari

  1. Heat the olive oil in a large saucepan and add the garlic and chilli.  Stir in the red onion and cook until soft.

  2. Add the calamari and cook for 5 minutes, then add the wine and give it time to reduce for a few minutes.

  3. Add the fish stock and cook gently for another 20 minutes. After this time add the Dolmio Taste of Calabria sauce and cook for a further 15 minutes.  Season to taste, then serve with the rustic bread, accompanied by sautéed spinach.


350g calamari (squid), sliced

200ml fish stock

1tsp fresh chilli

Freshly ground black pepper

1 garlic cloves, crushed

2tbsp olive oil

Sautéed spinach

Sea salt

2 slices of toasted rustic bread

1 small red onion, thinly sliced

50ml white wine
